Veronese wines such as Amarone, Valpolicella, Ripasso and Recioto are very different wines but with one thing in common: they are all made from the same red Verona grapes, indigenous varieties grown almost exclusively in the Veneto region, and 'Grotta del Ninfeo' has always cultivated these incredible grapes such as Corvina, Corvinone and Rondinella.
Corvina is an indigenous black grape variety used since antiquity for the production of wines such as Valpolicella in the Veronese territory. Corvina is a small vine with compact clusters. It produces dark red grapes with robust tannins.
Corvinone is a vine recently recognised as indigenous to the Veronese territory, not to be confused with Corvina. The colour of the grape berries is reminiscent of crow's feathers. It has a large bunch size and large berries.
The name derives from the bluish-black colour of the berries, similar to the swallow's plumage. It is a fundamental ingredient in the production of Amarone and Recioto della Valpolicella, thanks to its ability to accumulate sugars during drying.
